A cloud kitchen in Istanbul: one kitchen, six brands

Mise Cloud Kitchen is Mise Mutfak's delivery-only kitchen in Ataşehir, on the Asian side of Istanbul. There are no tables, no waiters and no shopfront. Doner, fried chicken, crispy chicken, burger and charcoal-grill brands are all cooked here, and every dish leaves the kitchen in a delivery bag.

Cloud kitchen

How a cloud kitchen differs from a restaurant

In a conventional restaurant, the kitchen's time is shared with the tables out front. A cloud kitchen has no dining room at all; every order arrives through a food delivery app, and the whole kitchen is planned around delivery. That is what makes it possible to run several brands from one site, each with its own menu.

At Mise Cloud Kitchen, doner, chicken and grill brands are cooked under the same roof. In the apps each brand appears as a separate restaurant; behind the scenes they share ingredients, staff and hygiene routines.

  • No dining room All of the kitchen's capacity goes to delivery orders.
  • Several brands Six menus from a single kitchen team.
  • Four ways to order Directly from our QR menu, or via Yemeksepeti, Uber Eats and Migros Yemek.

Terms

Cloud kitchen, ghost kitchen, dark kitchen: one idea, several names

The names change with the country, but the model is the same: a professional kitchen that cooks for delivery and never seats a guest.

Cloud kitchen
The industry term, common in Asia and the Middle East and the one we use. It describes the kitchen as a production site that lives "in the cloud" of delivery apps rather than on a high street.
Ghost kitchen
The usual term in the United States. It stresses that there is nothing to visit: no sign, no counter, only a kitchen and a pick-up point for couriers.
Dark kitchen
Mostly British. Like a "dark store" in grocery, it is a site that is closed to the public and open only to orders.
Virtual brand
The restaurant you see in the app. A single cloud kitchen can run several virtual brands, each with its own name, menu and recipes; ours are listed above.

Istanbul

Why a cloud kitchen suits Istanbul

Ordering food through an app is an everyday habit in Istanbul, from office lunches to late dinners at home. A cloud kitchen is built for exactly that demand: it does not need a busy street front, so it can sit where couriers move quickly and spend its space on cooking stations instead of tables.

Our kitchen is in Mustafa Kemal Mahallesi in Ataşehir, a district of offices and apartment blocks on the Asian side. Each app draws its own delivery zone around that address, which is why the brands you see depend on where you are ordering from.

Running several brands from one kitchen also keeps the menu wide without opening several restaurants: a doner, a crispy chicken and a burger order can all be cooked under the same roof, by the same team, to the same hygiene routine.

FAQ

About cloud kitchens

What is a cloud kitchen?

A restaurant kitchen with no seating that cooks only for online orders. You order in a food delivery app, the food is prepared in the kitchen and a courier brings it to your door. It is also known as a ghost kitchen or dark kitchen.

Where is Mise Cloud Kitchen?

Our kitchen is in Mustafa Kemal Mahallesi, Ataşehir, on the Asian side of Istanbul. As there is no dining room, we do not take visitors or table bookings; orders come in through our QR menu and through Yemeksepeti, Uber Eats and Migros Yemek.

Can I order from two brands in one basket?

Each brand is listed as a separate restaurant in the apps, so baskets are per brand. If you want food from more than one brand, place a separate order with each; they all leave the same kitchen.

Can I order without a delivery app?

Yes. The QR menu shows the products and current prices of all our brands, and you can place your order directly from it. Because no delivery app sits in between, it is usually the better-priced way to order. Scan the code or tap "Order online", then choose a brand; the menu is in Turkish.

Which parts of Istanbul can order from the kitchen?

Delivery zones are set by each app, based on the distance between your address and our kitchen in Ataşehir. Enter your address in Yemeksepeti, Uber Eats or Migros Yemek and the brands that deliver to you will appear.

Who brings the food to my door?

App orders are collected from our kitchen by the courier of the platform you ordered on; we do not run our own delivery fleet. That is the usual set-up for a cloud kitchen: the kitchen cooks and packs, the platform delivers.

Is cloud kitchen food cooked in advance?

No. Ingredients arrive fresh every day and are prepped for the shift, but the dish itself is cooked when your order reaches the kitchen screen, then packed and handed to the courier.

Are Mise Mutfak and Mise Cloud Kitchen the same?

Yes. Mise Mutfak is the company and its Turkish corporate website; Mise Cloud Kitchen is our English site about the kitchen where the brands are cooked. For company information, careers and contact, see misemutfak.com.
